Our goal has always been to make French food accessible to home cooks around the world, and we set out to ensure our first cookbook stays true to that vision. This cookbook is designed for anyone to pick up and use to create genuine French cuisine at home without needing a culinary degree or spending hours in the kitchen.

But what truly distinguishes our cookbook is that most of the recipes incorporate fundamental culinary techniques. That means every recipe you make will help you learn new skills and become a better cook in the process. People are often surprised when they learn that it's just the two of us behind the French Cooking Academy.

Creating a book with 100 recipes, each accompanied by a photo to show you what the dish should look like, is no small feat. We poured our heart and soul into crafting our first book. It truly was a roller-coaster ride as we lived, breathed (and ate) these dishes for almost a year.

Every dish you see as you flip through the pages was tested and tasted dozens of times in our home kitchen, and each picture was beautifully styled and photographed by Kate. Here's how it worked: I would prepare the dish, then rush it immediately to our photography space for Kate to capture. Then, we would devour it for lunch, dinner, or dessert, or share it with our neighbors (there is a limit to how many choux puffs with chantilly cream you can eat after several test runs). What you see is exactly what has just come out of the oven or the fridge, without a team of stylists using tricks to enhance the presentation.

We hope you'll appreciate the selection of authentic French recipes, representing what you can expect to create in your own home kitchen. Our intention has always been to create something unpretentious, authentic, and accessible to the home cook who wants to discover classic French cooking.
