Ingredients

Adjust Servings:
1/2 cup milk
1/2 cup sunflower oil
4 whole eggs
4 tbsps cocoa
1 kg banana
1 cup whole wheat flour
1+3/4 cup Brown sugar
1 cup oats
sliced almond

Whole -wheat banana cake

This cake combines flavor and healthy ingredients. It is rich in good fibers. It is very simple to put together. The preparation of the batter only requires a regular blender.

    Prepare your mise-en-place.
    Pre-heat your oven at 180º C.
    This batter will become quite thick and heavy so work it slowly, step by step to prevent damage to the blender.
    Get a blender and start with the liquids.

    Add the milk, the sunflower oil, the eggs and two tbsps of the cocoa powder and blend for a few seconds.

    Add the banana and blend it in.

    Add the whole-wheat flour and blend it in

    Add the brown sugar and blend it in.

    Add the oats and blend it in.

    Add the baking powder, use a big spoon and combine it well into the mix.

    At this point we should have a thick batter. Grease and flour a baking pan ( I use a round pan with 25 cm diameter).
    Add half of the batter ad spread it to cover completely the bottom of the pan.

    Get the remaining bananas and slice them lengthwise. Spread them on top of the first layer of the batter to cover it evenly.

    Sprinkle the remaining cocoa powder on top of the sliced bananas. Sprinkle also two tbsps brown sugar on top of the bananas.

    Pour the remaining of the batter covering completely the mix, then
    sprinkle sliced almonds on top of the mix and also sprinkle the remaining brown sugar to get some caramelization.
    Instead of the sliced almonds you can use mixed nuts or granola.

    Bake it in the pre-heated oven. It shoud take 30-35 minutes. since the batter is naturally dark in color, use a tothpick to monitor when it is cmpletely baked.

    When it is done take it from the oven and let it sit four a few minutes to cool enough to remove it from the pan.
    I like to enjoy the first freshly baked slice with a good large cup of coffee.
