Directions
Making a shortcrust pastry by hand is simple, soothing and fun to do. There are no baking skills required and if you follow the few simple steps in that recipe you are sure to end up with a fresh and delicious pastry you can use for all kinds of savory quiches and sweet tarts.
Make sure you measure all of the ingredients listed in the recipe before you start. and try to use whenever you can the right equipment to get the job done.
when making a shortcrust, I personally use an electronic scale to make sure everything is accurate as well as a good quality rolling pin.

Put all of the flour on the Benchtop and make a wellPut the 250 grams of flour on the Bench top in a well shape (with a whole in the middle as seen in the video.) |

Add the ingredients in the wellIn the well add you egg yolks,salt water and mix them them together with a spoon or your fingers. |

Cut your 125 grams of butter into small pieces and them in the well (on top of the the water and egg mix as shown in the video) |

incorporate the flour the egg water and butter mixSprinkle some flour on top of the butter, them take some butter/flour mix in your hands and squeeze it out (as shown in the video) |

Add more flour on top of the butter and repeat the squeezing process until a dough start to form |

Roll the dough into a ball, cover and storewhen the dough is ready roll it in to a ball or any other desired shape, cover in plastic wrap or a clean cloth and store in the fridge for 2 hours before use. |
