Ingredients

Adjust Servings:
2 whole eggs Boiled
6 leaves lettuce butter lettuce
1 bell pepper Red yellow or green (diced)
3 tomatoes sliced
1 cucumber sliced
1 can canned tuna small can
20 pieces Black olives Italian or french olives (pitted)
8 pieces anchovies anchovies in oil
3 Spring onions (sliced)
12 Broad beans fresh
1 jar Artichokes small jar of artichokes heart
1 pinch salt fine sea salt
1 pinch pepper black peper
100 ml olive oil best quality first cold press
1 squeeze Lemon juice

The Salad Nicoise is the perfect recipe to make when the spring is here as all the necessary vegetables are usually in season. the preparation of this salad does any require any cooking so its perfect if you don’t have much time. All the vegetables are either sliced or diced and and the only cooking needed to to boiled a few eggs.

Layout the vegetables on the bottom of the dish

Lay down your lettuce leaves first in the circle in the bottom of your dish followed by the tomatoes leaving an empty space in the middle of the dish.
when done add the diced cucumber, diced bell peppers, artichokes heart and broad bean (if you have some)

Add the tuna, black olives and boiled eggs on top of the vegetables

Place the tuna chunk in the middle, sprinkle the black olives evenly around the dish and place half egg on each side of the dish.

Add the finishing touches, season the salad and serve

place two pieces of Anchovies on each egg, sprinkle spring onions evenly around the dish and finally add your seasoning. (salt, pepper and olive oil)
if you wish to do so you can add a squeeze of lemon juice as well to finish of your salad.
