Wash and prepare the fruits

Gently wash the raspberries ( or strawberries depending what you like to use) then pat the fruit dry with a kitchen towel or clean cloth. when done remove the stokes on each fruit.

Process the fruits

put all of the fruits in a food processor and blend them into a liquid. alternatively you can process them manually using a drum sieves)

Add the sugar an lemon juice

put you processed fruits into a bowl then add all of the icing sugar and lemon. mix the coulis using a whisk until the sugar and lemon are well incorporated.

filter the coulis and reserve

Filter the fruit coulis using a sieve and reserve in the fridge until cold. when its cold enough its ready to be served.
