Ingredients

500 grams chicken bones neck,wings and carcasses
50 grams carrots
50 grams onions
100 grams tomatoes optional
10 grams tomato paste
1 clove garlic
1 bouquet garni
500 ml veal stock prepacked of the shelf beef or veal stock

A quick and easy brown chicken stock recipe that you can use for multiple French poultry base dishes sauce and stews. this technique uses the classic french technique where water is replace with off the shelf brown stock to supercharge the flavor and reduce the cooking time to 30 minutes

Prepare chicken bones and cut the vegetables

Wash, peel and cut the carrots, onions, and tomatoes in a rough mirepoix (in cubes of 1cm) of Chopped all of the bones in small pieces.

Roast the bones with the carrots and onions

Add a tablespoon of oil in stockpot on high heat and wait until the oil reach smoking point. add all of the chicken bones in the pot and roast them for a few minutes until they are brown on all side (avoid burning them). add then the carrots and onions in the pan and cook with the bones a further 10 minutes

Add the veal or beef stock and the rest of the garnish

Pour the liter of prepacked stock over the bones stir well then add the tomatoes, tomato paste , garlic and bouquet garni. stir again, bring to the boil. once the stock boils, turn the heat back down to a simmer and leave to cook gently for 35 to 40 minutes.

Finish the stock and use of store

once the stock is ready, pass it through a sieve and reserve it in a clean container. let it cool down and either use it straight away or freeze it for later.
if you want make a stock that is more concentrated, put it back in a pan after filtering it and let reduce in a saucepan on a low heat for a long period of time.
